How do we make freeze-dried sweets?
Freeze-drying means drying by freezing under vacuum. We do it ourselves, one batch at a time.
We freeze
The sweets go into the freeze dryer and freeze rock solid.
We switch on the vacuum
The ice turns straight into vapour, so the candy puffs up and loses its water.
We pack
We seal them in airtight bags, because moisture in the air takes away the crunch.
