Freeze-dried ice cream: ice cream that doesn't melt 🍦

Regular ice cream melts because it has a lot of water. In a freeze dryer the water is removed, so the ice cream turns dry, light and brittle. You can keep it in the cupboard and eat it at room temperature, and in your mouth it melts like regular ice cream. It's often called astronaut ice cream.

What does it taste like?

At first it crunches like meringue, then it melts in your mouth. It's dry rather than cold, which surprises people the first time. The wafer stays crisp.

How should I store it?

Don't put it in the freezer or fridge, because it's humid in there and the ice cream will go soft. Keep the bag closed in a dry place.

What to watch out for

The ice cream contains milk, and the wafers contain gluten. You'll find the full ingredients on each product page.

Try our freeze-dried strawberry ice cream sandwich. We explain why ice cream doesn't melt in our post on freeze-dried ice cream.
