Freeze-Dried Strawberry Ice Cream Sandwich

The freeze-dried strawberry ice cream sandwich is an ice cream sandwich with the water removed under vacuum. The ice cream turns dry, light and brittle, so you can keep it in the cupboard and eat it at room temperature. In your mouth it dissolves and tastes like strawberry ice cream.

The wafer stays crisp. We freeze-dry them ourselves in Poland.
